Fast forward a few years. I decide to clean up what we are eating and start experimenting with baking and using "healthier" ingredients. The first batch of "healthy" blueberry muffins were great!!....or so I thought. I took them on a family trip for a quick breakfast and let's just say not everyone thought they were as "great" as I did ;).
SO I kept trying and using different recipes and working with new ingredients and let me just say, THIS IS THE BEST RECIPE I have used in the last 5+ years of experimenting!! Moist, delicious, and CLEAN! The boys GOBBLED them up and I only have 6 left to freeze. I'll take that as a compliment!
Best {EVER} Oatmeal Blueberry Muffins
Ingredients:- 1 1/2 cups Quaker quick oatmeal
- 1 cup unsweetened almond or coconut milk
- 1/2 cup brown sugar, packed
- 2 tbsp honey
- 1/2 cup unsweetened applesauce
- 1 large egg
- 1 tbsp coconut oil
- 1 tsp vanilla extract
- 3/4 cup white whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup frozen blueberries
Directions:
Preheat oven to 400° or 350° for a dark pan. Line a muffin tin with liners and lightly spray with oil or oil and flour the pan if you don't have liners.
Soak oats in milk for about 30 minutes.
In a medium bowl combine brown sugar, honey, apple sauce, vanilla, egg, coconut oil and mix well.
In another bowl combine flour, salt, baking powder, baking soda and whisk to combine.
Combine oats and milk with sugar, applesauce mixture and mix well. Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries.
Spoon into the muffin tin and bake for 22-24 minutes. (makes 12)
TRY HARD not to eat them all :).
Freeze leftovers in freezer for a quick breakfast or snack!
