Clean Eating Meatballs

This is one of the quick easy freezer meals that we like to make at our house---Meatballs!! If you can't tell by now I am OBSESSED with quick, easy meals that I don't have to plan ahead for. These are awesome for quick dinners- re heat in the microwave OR the over, add rice and steamed veggies for sides and you're set! 


Clean Eating Meatballs

2lbs Lean ground meat (we use elk) 
1 c. Oats
1/4 c. Organic Tomato sauce (we use home canned salsa)
1 medium onion, chopped
2-3 cloves garlic, chopped
2 eggs
Salt, pepper, seasonings to taste

Mix ingredients in large bowl. Roll into 1 inch balls and bake on cookie sheet for 15-20 minutes at 400 degrees. Makes 30 meatballs.

Freeze leftovers and reheat in oven at 350 for 5 minutes OR heat in microwave. 

VARIATIONS:We have added red/green bell peppers, cayenne pepper, cilantro, parsley, and other herbs/spices and veggies.
