Peanut Butter Oatmeal Cookies

I apologize for the recipe I am about to share with you...


My sister-in-law makes the MOST AMAZING peanut butter blossom cookies (sorry mom). If you never have a peanut butter blossom cookie- I suggest you don't. Because you'll eat the whole plate like I tend to do whenever she makes them! 

So tonight I got a hankering for some of those amazing cookies and decided to make some. But turns out I didn't have the ingredients. :p No problem right? I really love revamping and being creative in my baking and cooking using different ingredients. So I took on the challenge.

If you look in my cookbooks I have ingredients crossed out with new ones put in, and different measurements and ideas. I think it's fun to change things up and trying to things when cooking and especially baking!

So tonight I used some of my new favorite ingredients to make a new version of these peanut butter cookies.

The result? Amazingness.

I bet you can't eat just one. ;)

Peanut Butter Oatmeal Cookies
1/2 c. coconut oil
1/2 c. crunchy peanut butter
2 eggs
2 Tbs. Almond milk, unsweetened
1 tsp. pure vanilla extract
1/2 c. raw stevia
1/2 c. light brown sugar
1 tsp. baking powder
1/8 tsp. baking soda
1 1/2 c. whole wheat flour
1 c. old fashioned oats
3/4 c. semi-sweet chocolate chips (optional)

Mix wet ingredients. Beat together until combined. Mix dry ingredients separate. Combine wet and dry ingredients. Add chips. Roll into balls or drop onto cookie sheet, ungreased. Bake at 350 degrees for 10 to 12 minutes. Makes 24. 


Freeze left overs (if they make it that far...) for a quick yummy treat.
