We're about ready to start gearing up for potato harvest around these parts.
One of my FAVORITE ways to eat potatoes is Oven Baked Parmesan Fries! They are a great side to so many meals.
Oven Baked Parmesan Fries
2-3 Medium Potatoes2 T Fresh Grated Parmesan Cheese
1-2 T Lite Extra Virgin Olive Oil
1-2 T of herbs and spices of your liking
*Preheat oven to 425.
*Wash and cut potatoes into *about* 1/8ths.
*Place on a cookie sheet that has been lined with foil and lightly greased.
*Mix spices/herbs of your choice and Parmesan cheese in a small bowl. (Our favorite spices and herbs to use are basil, oregano, thyme, dill, marjoram, garlic powder, and season salt).
*Place all of the potatoes into a gallon size freezer bag, add olive oil and the parmesan cheese/spice mixture to the bag.
*Seal the bag and shake until the potatoes are evenly coated.
*Once thoroughly coated dump onto the prepared cookie sheet and spread in a single layer.
* Bake 30-45 minutes or until tender and lightly golden brown. I also like to "stir" mine a bit about half way through!
